    i dont know if i should be asking this..
    but am kind of in a confused state.. please help me.
    my husbands birthday is coming up in a week and i planned on making a cake like a coin. since he loves coins.
    i tried one out just to be on the safe side. i looked at the pictures online and tried to shape the buttercream on top into the face that was on the coin.
    and it was a total disaster. i made the man look like a monster..
    is there any other way like with fondant or something that i can try to get the shape done..
    my mind is just not working as of now..
    please give me whatever advice you can..
    really need it..

      Hello Kaiz

      I can understand your frustration with your cake! What I would do is get a coin and take it to a copier then blow up the size to what your cake would be that may make it easier to create the face possibly out of fondant which should be kneaded until nice and pliable to work with. this is the only thing I can think of that may be of help to you! Either way I wish you the best in this endeavor.

        thank you so much.. well i made the cake.. it didn’t go so good.. 😦
        i thought of making a locker with him sitting in the front on a chair and his coin box on a table with the coins hidden inside a tin in the cake..
        everything went great until i started rolling the fondant onto the locker cake and i stay just bang across the beach. so i guess the fondant just absorbed all the moisture and just started falling apart..
        it was a total disaster. and the heat was like crazy that day..
        anyway, then i just removed the whole fondant and made chocolate ganache and just poured it on the top and decorated with flowers at the last half an hour of cake cutting..

        that looked good too.. but not what i had planned..

        having said that.. i used your chocolate butter cream icing.. and omg, i love you for sharing that.. have become a fan of it.. i myself couldn’t stop eating it.. so i really want to thank you with all my heart..

    Hey!! I am making a cake that resembles your cross cake, and I was wondering how you do the borders. What kind of tip are you using?? Ur cakes are spectacular 😉

      Maggie sorry for such a late response but to answer your question…I use tip number 17 for the white icing and tip number 16 for the blue icing on the borders. For others who may ask I started with a 12X18 cake and cut out the cross from it.

    Hi Sugar lane,

    Just looked at your figures their amazing . I`ve not had the courage to make figures yet ..
    I have made fondant roses which came out really well . { I`m a beginner at baking and decorating cakes } .

    I`m really having trouble making buttercream . I never know how much to make and it never seems to come out thick enough to use in a piping bag . I usually end up throwing it away and buying frosting which works out expensive . I`ve looked at quite a few websites and they mainly have cup sizes for the amount of ingredients and coming from the UK it means nothing to me { I work in ounces } . Do you have any ideas ? Also can you use Tylose powder in buttercream to give it strength ? .

    First of all i would like to tell u that your cakes are beautiful!i love baking and decorating cakes but i’ve got one problem…the city in which i live is very hot and humid.Every time i make fondant it starts melting and becomes very sticky…any suggestions???I will be eagerly awaiting your reply!Thanks a bunch!

      Hello Baking Lover if I were in your are what I would to is to add some tylose powder or cmc powder to your fondant it helps with the humidity issues and can firm up the fondant helping it with the melting issues. Hope this helps, add 2-3 tsp to a pound of fondant.

    Would you say that the fondant and tylose mix is ok to be used for my small detailed flowers like the lilly and the dogwood and the Brier rose. I have taken some calsses and am really starting to get into the hand made flowers. I really love the lilly.

      Tammi Yes, adding tylose or cmc powder is a way to make a quick form of gumpaste which is used for making flowers….good luck to you!!

    So glad I found your site!

    I was wondering whether you could help solve a mystery… I noticed in a few of you photos (like the reindeers with the Santa, the little pink elephant right at the top & the little guy with the paw print on his shirt…) that your icing seems shiny.

    I used to use store bought fondant in South Africa but now in Kenya I have to make my own marshmellow fondant – both types of fondant has a matt finish. How do you get yours to have the shiny finish?

    Certain recipes on Wilton’s site requires Candy Melts candy – I’m guessing using that with the fondant would give it a bit more of a shiny finish. Do you ever use Candy Melts?

    Since we can’t even buy fondant here, I obviously have no experience with Candy Melts.

      Hello freed2be..
      I make my flowers and figures from fondant and gumpaste. You may want to try to use a little steam.. Plain ole boiling water—-steam. houl your figure over the steam for just a few seconds and see if this helps. I see them do it on the cake shows on television all the time. If your cake is standing,, use a hand steamer..Remember, just a quick pass with the steam and you will see the difference.

        Hi Tammi, sorry I only saw your reply now. Thanks so much. I recently searched the web (again) to figure this out and finally learned the trick (exactly as you explained) and I found that it is actually somewhere on this site too. Additional methods that I read about and tried is to rub white cooking fat (like what you add to gumpaste) sparingly over the figurine – it looks great!!! But I think it can still get tricky. Another method was to place the figurine in the fridge overnight but I haven’t tried it yet and I haven’t tried the steam yet either but will when I’m brave enough 😉

          I would not put your figurine in the fridge since it can and will cause it to break down due to all the moisture that is in a fridge, I have had figurines look fine and brought it out of the fridge while just testing it out to see what it would do and when I came back my figurine looked like a melting snowman. So be very careful! On tv some of the decorators put fondant covered items in the fridge but what your not told it that their fridges are humidity controlled just for cakes and icings….soo be careful friends I do not want to see anyone work very hard on a piece only to have it ruined while trying to get it shiny…to get a nice shine on things you can use a product called confectioners glaze. You can do a search online for it…it is an AWESOME product that can be painted on your fondant/gumpaste pieces! Hope this helps all of you!

    I want to make sunflowers to put atop a cupcake on frosting ….fondant or gumpaste? How far in advance can I make them? I am a beginner ,but a quick learner !

      Hello to you Janis!!

      You know you could go a few directions with your sunflowers on top of your cupcakes…..1. you could actually make them right on top of the cupcakes out of the frosting with your piping bag, yellow stiffened buttercream, tip #352 and the grass tip or an oreo.

      Begin by placing the oreo cookie in the center of the cupcake and pipe the petals of the flowers going from the edge of the oreo cookie out to the edge of the cupcake. This will give you a very unique sunflower by using the oreo cookies as your center, or you could just use brown icing with the grass tip….put the tip on top of the center of the cupcake and pull straight up continue this motion until you have created a circular area for the center for your flower.

      As far as Gumpaste or Fondant….Here is my rule of thumb. I would use fondant to make the flower if the flower is intended to be eaten along with the cupcake.
      Gumpaste is edible but is not the best tasting and only best used for things that can be/or will be removed from a cupcake or cake. When using Gumpaste to make your flower I would make them up about 2 wks ahead so that they have plenty of time to setup and dry. Make sure to make a fw extras since gumpaste flowers can break very easily! Store them in a card board box until you need them for the event.

      I hope this information helps and I wish you much luck no matter which way you decide to create your sunflowers!!

    Your figures are so pretty i have a question why do mine sink in and when they dry it isnt smooth?

      Cathy, the reason your figures are sinking in is that they need more strength the paste your using is too soft to hold its shape, that is why I add tylose powder, cmc powder, gum trag or gum tex to my paste. Doing this is an easy way to create a quick gumpaste. To get a smooth figure it is best to roll a very smooth ball in your hand and take that ball and begin to shape it for your piece and it should retain the smoothness as you shape it. I hope that I was clear in my explaining to you, I wish you the best my friend!

    I am just starting to learn how to use fondant and gumpaste and I was wondering how do you make the body for the head that you showed how to make in the video? I am hoping to have figured something out by Feb. It is my fiance’s 50 birthday and I want to make a golf themed cake for him and I would love to have the cake have a figure of him on it.

      Hello Christine!!

      To create a figurine BODY….. start off with a ball of fondant and/or gumpaste then start rolling the ball into sort of a sausage shape with your 2 hands together (I hope this makes sense, lol) you will want to make it in proporthion to the head that you are making, then take your sausage shape and press the bottom against the table to flatten the bottom so that it will sit up on its own. Then taking your fingers and go from the middle of the standing sausage shape and smooth upwards making the top of the body smaller than the bottom of the piece. I know that it is very tough to explain this in writing so if you want to see me do this example please see the how to on Youtube where I made a sitting baby. Here is the link….
      This should give you the basic idea of how to make a body and the arms and legs as well. Just adjust the body size according to the head that you are making. Good luck to you!

    I am truly amazed at your beautiful artwork! I am always searching for ideas and found your website so so helpful. The bow you placed on the pale blue heeled shoe caught my eye. After watching your video, I was able to make a large yellow bow out of fondant for my nephew’s shower cake last week; the top was a large fondant sunflower. I had the great pleasure of making his wedding cake and was really nervous about using fondant to cover the cake; however, your tip for buying Pettinice fondant saved the day! It is like silk and so easy to work with; I am sold! Thank you for sharing your gift; I have learned so much from you just by absorbing myself in your website!

    I was bing-ing to find a way to make my pearl beads shiny and your site popped up and Im so thankfuL and do hope the Pam spray does make my wedding cake shiny. Does it work on all fondant and gumpaste pieces? How long does it take to soak in so to speak?
    I purchased ready made pearls to put on three layers but theyre kinda blah looking at the moment and I want them to look like shiny pearls. I do have super pearl luster dust but not too sure which way to go with this.
    But I love your incredible work, you definitely got talent. Im just starting out with fondant and gumpaste. This will be my second wedding cake so since its for my son dont want it to fail with me standing there. LOL

      To make your pearl beads shiny…..use the super pearl luster dust they will look BEAUTIFUL that way instead of the pam spray, that is best used on a cake.
      Put your pearls in a baggie and add some super pearl in the baggie just a touch will do, and then close the end of the baggie and shake the baggie up the
      pearl dust will cover your pearls and they will look very nice for you!! I wish you the best in the future!!

I do cakes here and there, however I am unable to sell Brutus Buckeye Figures due to the copyright laws on them…the one i did on the cake I did before was for my brothers which was legal since I did not sell it. I am so sorry i wish I could have helped you out with this, but I cannot do something that is not legal.

    I’m a beginner at this and have viewed lots of YouTube videos and yours is my favorite; your attention to detail is breath taking!

        Hello to you Haley…..

        Thanks for your sweet comments……Doing any sort of figurine requires creating shapes….I always start with a ball shape and then turn that ball into the sort of shape that I need for the ears, the legs, and arms. That is really the only way to describe how to do them to be honest. It is best to start with a little fondant and just practice making shapes that look like what you are trying to create. I hope this make some sort of sense, I always struggle with trying to answer questions that ask me how to create a certain figurine.

      Hello Pam,

      Choco pan, is really not much different than regular Fondant. It is made with chocolate and has a great chocolate flavor. You can roll the chocopan very thin and still cover a cake with it, in addition it makes beautiful swags on cakes. I think it would be fantastic for a wedding cake. I wish you the best with your cake!!

    So you make all your fondant from scratch or do you use commercial fondant? My first wedding cake using fondant, I did it from scratch, having no experience with making it from scratch, it was very interresting, but I pulled it off, and it turned out great!

    Hola Donna! I live in Fuerteventura one of the Canary Islands and make and decorate cakes as a hobby/job. I love your work and find it inspirational. I need a lot of that as the only cake decorating supplies available here is icing sugar! I have managed to bring some stuff over from the UK when I visit family. But, for the most part I now make everything from scratch. Only when you try the wonderful world of cake decorating for yourself do you really appreciate all the time, effort and skill that goes into it, not forgetting the artistic flair, which you have more than your fair share of!
